Aaron
D. Spencer
Founder, Director and Chairman Emeritus
Aaron Spencer fits no one's stereotype of the modern
day chairman. He is a salesman, inventor, entrepreneur,
and restaurateur. At seventy-two years old, he's
constantly creating and hands-on, whether brainstorming
with the chefs, tinkering with a new store design
or measuring a new tablecloth amid amused customers.
He has a wall full of government patents, including
one for an instant set-up crib that could "mature" into
a youth bed. Above all, Aaron has an eye for opportunity,
which is how the world came to know deep-dish pizza.

As Executive Chef/Vice President of Food and Beverage, Christopher Gatto is responsible for the wide variety of menu items at all Uno Chicago Grill restaurants. Louie Psallidas
Senior Vice President and Chief Financial Officer
Louie joined Uno Chicago Grill in April of 2008. Prior to joining Uno,
Louie had worked as Senior Vice President and Chief Financial Officer
of the Papa Gino’s and D'Angelo restaurant brands since 2000. Prior to 2000 he worked as
Chief Financial Officer of John Harvard’s Brew House, also holding the role of
President for his final two years with the company.
During his career he has also held the roles of Vice
President of Finance with DAKA International, Inc.
and Audit Manager with the accounting firm of Deloitte
& Touche. Louie is a Certified Public Accountant and
a graduate of Suffolk University.
Louie, his wife Lisa, and their three children Kristina, Melissa and Peter, currently reside in North Reading, MA.

Roger C. Ahlfeld
Senior Vice President - Human
Resources & Training
Roger Ahlfeld is responsible for all aspects of Uno’s human capital management programs including recruitment, selection, employee relations, compensation, benefits, new store openings and management and hourly employee training and development.
Roger began his career with Uno in restaurant operations in 1992
and has been responsible for the companies Human Resource activities since 2001.
Prior to joining Uno he held operations positions with Ruby Tuesday’s and several independent restaurants. Roger holds a Master of Professional Studies degree in Hospitality Administration from the Cornell University School of Hotel Administration and a B.B.A. degree in Hotel and Restaurant Management from James Madison University. He, his wife Lamperni and two children John and Emily reside in Framingham, MA.

Senior Vice President - Purchasing
Prior to joining Uno Chicago Grill in October of 2007,
Jamie worked at On The Border as a C.O.O.
and previously had worked at Not Your Average Joe's
for 8 years as C.O.O. and at Hard Rock Café for 10 years
in various roles culminating as VP of International Operations.
He was active in the Purchasing initiatives at both On The Border and Not Your Average Joe’s concepts.
Jamie, his wife Colleen and two children live in Scituate, MA.
