PREVENTION MAGAZINE DESIGNATES UNO'S® FLATBREAD PIZZA A HEALTHY CHOICE

Boston, Massachusetts, April 29, 2008 - Prevention magazine, one of the country's arbiters of healthy living, has chosen Uno Chicago Grill's® Roasted Eggplant, Spinach and Feta Flatbread Pizza as a guilt-free pizza choice. Stating "we love it because," the magazine cited the calorie count of this Uno® pizza at 220 calories, vs. 550 calories in two slices of a traditional cheese pizza. The magazine encouraged readers to check the nutritional information on Uno's Nutrition Information Centers, located in the lobbies of most of the chain's restaurants. These centers detail ingredients, fat and sodium contents, calories and fiber of every item, and potential allergens, in addition to gluten-free menu options.

Last month, Uno was named America's healthiest chain restaurant by Health magazine, an honor bestowed after the magazine's team of nutrition experts, dieticians, and food editors reviewed more than 43 different chains, citing the company's lower-calorie flatbread pizzas, artificial trans fat-free menu, wide selection of grilled entrées (including hormone-free chicken), brown rice, multi-grain pasta, shade-grown, pesticide-free coffee, and organic teas, among several other highlights in making their determination.

"Our Roasted Eggplant, Spinach and Feta Flatbread Pizza is a great example of Uno's commitment to providing healthful menu options without sacrificing taste," says Frank W. Guidara, the company's chief executive officer. "We are delighted that Prevention noticed this and recognized us for it."

The company that was the first to develop deep-dish pizza in 1943 is still full of innovation. Uno Chicago Grill works closely with its Nutrition Advisory Board, which meets quarterly to discuss trends and solutions to improve the quality and nutritional value of its menu. The board includes world-class physicians with expertise in coronary disease, weight management, and other food/health related issues. CEO Frank Guidara oversees the Advisory Board and brings his expertise as a member of the Nutrition Roundtable for the Harvard School of Public Health.

In addition to being the first national casual-dining chain to eliminate artificial trans-fats, the company also introduced a separate gluten-free menu and, for guest safety and convenience, clearly describes menu items via its Nutrition Information Centers with ingredients that are linked to the most common food allergies, such as fish/Shellfish, soy, tree nuts/peanuts, egg, milk and wheat/gluten.

The company has invested more than $2 million in nutritional advancements since 2005 and, according to Mr. Guidara, will continue its commitment to providing delicious, fresh and healthful menu options for its guests.
