Passionate About Pizza and So Much More, Uno's New Fall Menu Boasts Artisanal Flair Without the "Fatty" Extras

BOSTON (October, 2007) - As the first and only casual dining restaurant to feature deep dish pizza as its signature dish and offer guests Nutrition Information Centers in its lobbies, Uno Chicago Grill® has distinguished itself as a leader in the restaurant industry. Now, on the heels of seven consecutive quarters of increased same-store sales, Uno® has another casual dining first to tout. By October 23, Uno's® extensive menu will feature zero grams artificial trans fat as well as several new food offerings.

"By providing our guests a zero grams artificial trans fat menu, we're showcasing our dedication to offering nutritious choices, not because we have to, but because it's the right thing to do," said Frank Guidara, president and chief executive officer of Uno Chicago Grill. "Our deep menu serves as a point of differentiation and pride for our more than 200 restaurants, with extensive choices for any palate or diet."

Twice yearly, the Uno culinary team reviews and updates menu items, introducing new foods to titillate taste buds while exceeding guest expectations. Since Uno Chicago Grill began this review process in 2005, the company has introduced more than 100 new items, including appetizers, entrees, pizzas, desserts and nutritious options for the health-minded guest.

Those NEW items making their debut on Uno Chicago Grill's zero grams artificial trans fat menu this month include:

  • Chicken Milanese
  • Grilled Rosemary Chicken
  • Grilled Rosemary Chicken with Aged Cabot Cheddar Sandwich
  • Asian Chicken Salad
  • Southwest Salmon Skewer Salad
  • Southwest of Chicago Steak Quesadilla
  • Peppered Shrimp Quesadilla
  • Spicy Shrimp Flatbread Pizza
  • Spicy Chicken Flatbread Pizza
  • Aged Cabot Cheddar & Sautéed Shroom Burger
  • BBQ Burger with Bacon and Cheddar
  • The One, The Only, Calzuno, The Magnificent
  • Gorgonzilla Burger
  • All-you-can-eat soup or salad with lunch specials

"We have taken a small pizzeria from limited to limitless," said Chris Gatto, Uno Chicago Grill's executive chef and vice president of food and beverage. "In addition to introducing new items to our menu twice yearly, we are always looking for ways to add hand-crafted and premium foods."

Currently, 33 percent of Uno's menu features hand-crafted foods. In addition, the company is placing an increased importance on premium ingredients. Uno Chicago Grill now serves its guests Certified Angus Beef®, aged Cabot® cheddar cheese and a new flavorful sauce infused with Samuel Adams Boston Lager®.

"We continue to expand our artisanal approach to food," said Guidara. "With all of the changes we're making, Uno is quickly moving into casual-plus territory, something, internally, we call 'Uno-Plus.'"
