NEW UNO CHICAGO GRILL OPENS IN MORGANTOWN

New Uno Features Low-Carbohydrate Options and School Partners Program

Boston (August 2, 2004) – Uno Restaurant Holdings Corp. announces the opening of its fourth Uno Chicago Grill restaurant in West Virginia. The new Uno Chicago Grill is located at 1085 Vanvoorhis Road, in the newly built United Center building. The store will officially open for business on Monday, August 2. The hours of operation are Monday through Saturday, 11:00 a.m. to 1:00 a.m. and Sunday, 11:00 a.m. to 11:00 p.m., with the full menu available until closing.

"We are proud to be part of the Morgantown community and are excited to open another Uno Chicago Grill in West Virginia," said Uno President and Chief Operating Officer Paul MacPhail. "Although our guests may already know and love our famous Chicago-style deep dish pizza, they’ll be pleased to find items like our Chicken Spinoccoli and Lemon Basil Salmon on the menu as well."

The newly built Uno Chicago Grill is 6,500 square feet, seats 262 guests and will open with 160 employees. The restaurant will look and feel like an old Chicago warehouse, with Windy City memorabilia decorating the walls and mahogany trim throughout the bar.

To further involvement and commitment to the Morgantown community, the new restaurant will offer Uno’s School Partner Program. The program includes several educational events, like free Pizza Maker Field Trips and fundraising opportunities for local schools and community organizations.

The new Uno is owned by Steve Neu, David Saul and Bruce Pauley of Absolut Holding Company. The restaurant will be run by General Manager Dave Mitchell. "Uno Chicago Grill provides a high quality casual dining experience and offers the best food around," said Dave Mitchell. "We believe that the variety of the menu, including the new low-carbohydrate items and the Kids Make Their Own Pizza option, will be a big hit with Morgantown-area guests."

In 2003, the restaurant known for its Chicago Original Deep Dish Pizza™ evolved its name from Pizzeria Uno to Uno Chicago Grill to reflect the variety of its menu. Today, Uno Chicago Grill has the same great pizza, but also offers a complete casual dining menu, including ribs, seafood, juicy burgers and steaks, innovative pasta dishes, scrumptious appetizers, low-carbohydrate alternatives and desserts.

The company continues to earn accolades from industry and business publications. In 2003, Uno Chicago Grill was named by Entrepreneur Magazine as the #1 franchise opportunity in their category. The company also was selected by Franchise Times as one of the top 20 companies to watch in 2003.
