NEW UNO CHICAGO GRILL OPENS IN ESCONDIDO

New Uno to Feature Curbside Delivery and Low-Carbohydrate Option

Boston (May 3, 2004) – Uno Restaurant Holdings Corp. announces the opening of its sixth Uno Chicago Grill restaurant in California. The new Uno Chicago Grill is located at 890 West Valley Parkway just two blocks east of I-15. The store will officially open for business on Monday, May 3. The hours of operation are Sunday through Thursday 11:00 a.m. to 11:00 p.m. and Friday and Saturday 11:00 a.m. to 12:00 a.m.

"We are proud to be part of the Escondido community and are excited to open another Uno Chicago Grill in California," said Uno President and Chief Operating Officer Paul MacPhail. "Although our guests may already know and love our famous Chicago-style deep dish pizza, they’ll be pleased to find items like our popular, juicy steaks on the menu as well."

The newly built Uno Chicago Grill is 4,800square feet, seats 156 guests, with an additional 35 seats on the outdoor patio, and will open with 110 employees. The bar area will feature DirecTV on three plasma and five flat-screen televisions. The restaurant will look and feel like an old Chicago warehouse, with Windy City memorabilia decorating the walls. In addition to serving a full menu including new low-carbohydrate options, curbside delivery service will be available.

The new Uno will be run by General Manager Krista Arvanitis and is owned and operated by San Diego Miller Restaurant Group. "Uno Chicago Grill provides a high quality casual dining experience and offers the best food around," said San Diego Miller Restaurant Group Owner/Operator Glen Miller. "In addition, we believe that the convenience of curbside delivery will be a big hit with Escondido-area guests." The franchise group operates three other Uno Chicago Grill locations including Pacific Beach, Chula Vista and Fashion Valley.

In 2003, the restaurant known for its Chicago Original Deep Dish Pizza™ evolved its name from Pizzeria Uno to Uno Chicago Grill to reflect the variety of its menu. Today, Uno Chicago Grill has the same great pizza, but also offers a complete casual dining menu, including ribs, seafood, juicy burgers and steaks, innovative pasta dishes, scrumptious appetizers, low-carbohydrate alternatives and desserts.

The company continues to earn accolades from industry and business publications. In 2003, Uno Chicago Grill was named by Entrepreneur Magazine as the #1 franchise opportunity in their category. The company also was selected by Franchise Times as one of the top 20 companies to watch in 2003.
