NEW UNO CHICAGO GRILL OPENS IN WISCONSIN DELLS

New Uno to Feature Low-Carbohydrate Options and School Partners Program

Boston (April 27, 2004) – Uno Restaurant Holdings Corp. announces the opening of its fifth Uno Chicago Grill restaurant in Wisconsin. The new Uno Chicago Grill is located at 1000 Wisconsin Dells Parkway South, between the Great Wolf Lodge and the Wilderness Resort. The store will officially open for business on Thursday, April 29, 2004. The hours of operation are Sunday through Saturday opening at 11 a.m.

"We are proud to be part of the Wisconsin Dells community and are excited to open another Uno Chicago Grill in Wisconsin," said Uno President and Chief Operating Officer Paul MacPhail. "We continue to add innovative, high-quality items to our grill menu, and the Wisconsin Dells customers will soon know and love our famous Chicago-style deep dish pizza."

The newly built Uno Chicago Grill is 8,000 square feet, seats 302 guests and will open with 130 employees. The restaurant will look and feel like an old Chicago warehouse, with Windy City memorabilia decorating the walls and mahogany trim throughout the bar.

To further involvement and commitment to the Wisconsin Dells community, the new
restaurant will offer Uno’s School Partner Program. The program includes several educational events, like free Pizza Maker Parties and fundraising opportunities for local schools and community organizations.

The restaurant is owned and operated by Lawrence and Mary Zunker of Parkway Group, Inc. and will be run by General Managers Mike and Laura Nate. "Uno Chicago Grill provides a high quality casual dining experience and offers the best food around," said Lawrence Zunker. "We believe that the variety of the menu, including the new low-carbohydrate items, will be a big hit with Wisconsin Dells-area guests." The Zunkers hope to open at least two other Uno Chicago Grill locations in the Fox River Valley area.

In 2003, the restaurant known for its Chicago Original Deep Dish Pizza™ evolved its name from Pizzeria Uno to Uno Chicago Grill to reflect the variety of its menu. Today, Uno Chicago Grill has the same great pizza, but also offers a complete casual dining menu, including ribs, seafood, juicy burgers and steaks, innovative pasta dishes, scrumptious appetizers, low-carbohydrate alternatives and desserts.

The company continues to earn accolades from industry and business publications. In 2003, Uno Chicago Grill was named by Entrepreneur Magazine as the #1 franchise opportunity in their category. The company also was selected by Franchise Times as one of the top 20 companies to watch in 2003.
