NEW UNO CHICAGO GRILL TO OPEN IN FAYETTEVILLE

Opening Marks Twenty-Seventh Uno Restaurant in New York

Boston, Mass., (August 27, 2003) – Uno Restaurant Holdings Corp., known for Chicago’s Original Deep Dish Pizza™, announces the opening of its first Uno Chicago Grill restaurant in Fayetteville, New York. The new Uno Chicago Grill is located at 520 Towne Drive on the corner of Route 5 and Burdick Street. Situated in the heart of the newly-created plaza, the Fayetteville Uno Chicago Grill will be the first full-service restaurant to open. The store officially opens on Thursday, August 28. The hours of operation are Sunday through Thursday, 11:00 a.m. to 11:00 p.m. and Friday and Saturday, 11:00 a.m. to 1:00 a.m.

“We are proud to be part of the Fayetteville community and are excited to open another location in New York,” said Uno President and Chief Operating Officer Paul MacPhail. “We continue to add innovative, high-quality items to our grill menu, and of course, Syracuse area customers know and love Uno for our great deep dish pizza.”

The newly-built 6,000 square foot location will seat approximately 175 guests in the dining room plus another 18 in the bar area. General Manager Doug Scott, a member of the Uno Team for 12 years, will oversee the location. Doug graduated from the Culinary Institute of America in Hyde Park, NY and has more than 20-years experience in the restaurant industry. “Uno has the best food around and I am pleased to be able to open a location in the Fayetteville community,” said Doug Scott.

Uno Chicago Grill offers a complete casual dining menu, including ribs, seafood, juicy burgers and steaks, innovative pasta dishes, scrumptious appetizers and desserts, as well as its signature Chicago Original Deep Dish Pizza™ available in a variety of fresh fillings.

The Fayetteville location will employ 125 staff. The new Fayetteville location marks the 27th Uno Chicago Grill restaurant in New York. Other locations in upstate include Binghamton, Buffalo, Rochester and Syracuse.

Uno Chicago Grill was recently named by Entrepreneur Magazine as the #1 franchise opportunity in their category. The company was also selected by Franchise Times as one of the top 20 companies to watch in 2003.

Based in Boston, Uno Restaurant Holdings Corp. currently has a total of 198 restaurants.
