NEW UNO CHICAGO GRILL OPENS IN PHOENIX

Opening Marks Seventh Uno’s Restaurant in Arizona

BOSTON (January 10, 2003) - Uno Restaurant Holdings Corp., known for the Original Chicago Deep Dish Pizza, announces the opening of its 191st Uno Chicago Grill restaurant at 4801 East Cactus Road, the corner of Cactus and Tatum (across the street from the Paradise Valley Mall.) The store will officially open for business on Monday, January 13, and will be open daily at 11 a.m.

“We are proud to be part of the Phoenix and Scottsdale communities and are excited to open an additional location in Arizona,” said Uno President and Chief Operating Officer Paul MacPhail. “We continue to add innovative, high-quality items to our grill menu, and of course, Phoenix customers know and love Uno’s famous Original Chicago Deep Dish Pizza.”

The restaurant is owned and operated by Barry Maring, a restaurateur who also owns the Scottsdale Uno location.

“Uno has the best food around and I am pleased to open another Uno location in the Scottsdale/Phoenix community,” said Maring.

The new 5600-square foot location also has an outdoor patio. The building, which formerly housed a restaurant, has been completely remodeled. Maring employs approximately 150 employees between his two Uno locations.

Uno Chicago Grill offers a complete casual dining menu, including ribs, seafood, juicy burgers and steaks, innovative pasta dishes, scrumptious appetizers and desserts, as well as its signature Original Chicago Deep Dish Pizza available with a variety of fillings. With the latest opening, there are seven Uno Chicago Grill restaurants in Arizona: two in Mesa, two in Phoenix, one in Scottsdale, one in Tempe, and one in Tucson.

The company continues to earn accolades from industry and business publications. Just this month, Uno Chicago Grill was named by Entrepreneur Magazine as the #1 franchise opportunity in their category. The company was also selected by Franchise Times as one of the top 20 companies to watch
